Recipe : grilled eggplant with yoghurt sauce and pomegranate
A delicious recipe of grilled eggplant with yoghurt sauce and pomegranate will awaken your taste buds !
Ingredient list (for two people) :
- 2 eggplants
- Organic, fruity and Extra Virgin Olive Oil from Haute Provence
- A pinch of thyme
- Salt, Pepper
- ½ pomegranate
For the sauce :
- 3 natural or soya yoghurts
- 1 clove of garnic
- 5 sprigs of coriander
- 3 sprigs of chives
- 5 cL of lemon juice
- Salt, pepper
Preheat the oven to 180°C.
Clean the eggplants and cut lengthwise. Make cuts in the flesh in grid pattern.
Put the eggplants on a cooking sheet covered with greaseproof paper.
Add a dash of olive oil, salt and thyme.
Bake for 40 minutes, the flesh must be tender.
Meanwhile, put the yoghurts in a mixing bowl and crush the garlic. Add finely chopped herbs, salt, pepper and mix thoroughly.
Put the sauce in the fridge and extract the grapes of the pomegranate.
When the eggplants are cooked, place them in a plate with the yoghurt sauce. Arrange the grapes at the top and add a dash of olive oil.
