Recipe green asparagus with a poached egg
A delicious green asparagus recipe that will delight your family!
4 large eggs
800g fresh green asparagus
2 tablespoons of PDO olive oil
1 tablespoon balsamic vinegar
Wash the asparagus in clear water and cut off the feet.
Cook over a low heat with the PDO olive oil and 3 tablespoons of water. Watch the cooking with a knife.
Line a bowl with cling film and gently break an egg, the yolk must not break. Season and add a drizzle of PDO olive oil.
Lift the cling film and tie it. Do the same for the other three eggs.
Leave the oil to infuse for a few minutes.
When the asparagus are cooked, put them in a container. Deglaze the pan with balsamic vinegar. Add a drizzle of olive oil, salt and pepper before putting the asparagus back into the pan.
Then heat a large pot of water. Cook the eggs in it for 5 minutes.
Arrange the asparagus on plates. Carefully remove the cling film and place the poached eggs on top of the asparagus. Season and enjoy this recipe with green asparagus and a poached egg!
