Recipe for grilled salmon steaks and asparagus

Salmon, like PDO or AOC olive oil, has many health benefits. Indeed, olive oil contains mono-saturated fatty acids and is very rich in polyphenols, which allows it to have anti-oxidant and anti-inflammatory effects and to combat the risk of cancer. Similarly, salmon has many benefits on the bones with a high content of vitamin D which helps calcium to be fixed. In addition, it is very rich in B vitamins and therefore provides energy. Finally, the vitamins B9 and B12 contained in salmon are known to protect the lungs from a risk of cancer.
Ingredients: for 4 people
4 salmon steaks
1/2 teaspoon espelette pepper
1 clove of garlic
1 bunch of fresh asparagus
Extra virgin olive oil PDO from Haute Provence
Wash the salmon steaks, remove the bones if you see any and salt the fish on the flesh side.
Wash your asparagus, place it in a dish and brush it with olive oil. Add the crushed garlic clove and the espelette pepper. Season with salt and pepper and put in the oven for about 20 minutes.
Heat a frying pan with a drizzle of extra virgin PDO olive oil from Haute Provence and place the steaks skin-side down. Leave to cook for 3 minutes on high heat. Lower the heat, cover the pan and leave to cook for about 5 minutes.
Then turn the salmon steaks over and leave them to brown for 1 minute on high heat.
Season the salmon steaks with salt and pepper, add a drizzle of lemon juice and serve with the asparagus.
