Traditional paella recipe

Ingredients for the traditional paella recipe
- 1 chicken
- 1 white onion
- 3 to 4 tomatoes
- 1 red and 1 green bell pepper
- 2 chicken stock cubes
- 250g of fresh or frozen peas
- 4 tablespoons of AOC olive oil from Provence
- 300g of long rice
- 12 scampi
- 1 kg of mussels
- A dose of saffron
- 1 lemon
- Salt and pepper
Cut the chicken into large pieces.
Remove the stalk of the tomatoes with a knife.
Make a cross-shaped incision on the opposite side and plunge them into boiling water for 10 seconds before placing them under a bowl of ice water. This will make peeling the tomatoes easy. Then cut the flesh into large pieces.
Peel and chop the onion.
Peel and seed the peppers before cutting the flesh into pieces.
Then clean the mussels.
In a saucepan, add 1L of water and the 2 chicken broths and heat it up.
In a paella pan, heat 2 tablespoons of olive oil over medium heat. Add the chicken pieces and cook them, turning them regularly, until they are golden brown. Then drain and discard the oil.
Add 2 tablespoons of olive oil to the pan, the onion, tomatoes and peppers and fry for about 10 minutes.
Rinse the rice in a colander and add it to the paella pan. Mix well: the rice should be soaked in olive oil. Put the chicken pieces back in, add the peas and cover with the chicken broth prepared beforehand.
Cover the pan and cook your paella for 15 minutes, stirring regularly.
Finally, add the mussels and scampi and cook for about 5 minutes.
Dilute your saffron in 2 tablespoons of water and pour the mixture into the pan. Stir well and season.
Your paella is ready, all you have to do is taste it!
