Ingredients for the shortcrust pastry with olive oil:
200 g of flour
50 g of olive oil
5 cl of water
1 pinch of salt

- A shortcrust pastry
- 400 g of green asparagus
- About ten cherry tomatoes
- 3 eggs
- 25 cl of whole milk
- 40 g grated parmesan cheese
Preparation of the recipe for mini quiches with tomatoes and asparagus:
To make the shortcrust pastry, mix the flour and salt in a bowl.
Add the olive oil a little at a time until you get a grainy dough.
Then add the water and knead lightly.
Form the dough into a ball, wrap it in cling film and let it rest for about 1 hour.
For the filling, start by preheating your oven to 180°C.
Cut your shortcrust pastry into six equal-sized discs and insert them into the bottom of the tartlet molds.
Next, wash the tomatoes and asparagus and cut them in half.
In a bowl, break up the eggs, add the whole milk, parmesan cheese and season to your preference before mixing.
Place the tomatoes and asparagus in the tartlet pans and cover with the egg mixture.
Place in the oven for about 40 minutes, keeping an eye on the cooking time.
