  • 6 ripe tomatoes
  • 1 cucumber
  • 1 red bell pepper
  • 1 garlic clove
  • ½ red onion
  • 3 tablespoons of extra virgin olive oil
  • 2 tablespoons of sherry vinegar
  • 1 slice of stale bread (optional, for creamier texture)
  • ½ glass of water (adjust to desired consistency)
  • Salt and pepper to taste

Preparation

Start by thoroughly washing all vegetables under cold water. Cut the tomatoes into quarters and remove the tough stem area.
For a smoother texture, you can peel them by blanching briefly in boiling water.

Peel the cucumber, cut into chunks, and remove seeds if necessary.
Cut the bell pepper in half, remove seeds and white membranes, and chop into pieces.
Peel the garlic and onion, then roughly chop them.

Place all vegetables into a blender or a mixing bowl if using an immersion blender.
Add the stale bread, sherry vinegar, and olive oil. Blend on high speed until smooth and creamy.
Adjust the consistency with a bit of water if needed, and blend again. Season with salt and pepper to taste.

Transfer the mixture to a container, cover, and refrigerate for at least 2 hours.
This resting time allows the flavors to develop and intensify.

Before serving, give the gazpacho a final stir and pour into bowls.
