Recipe for shortbread with olive oil and honey

- 500 g of flour
- 130g of powdered sugar
- 30g of lavender honey
- 3 eggs
- 1 lemon
- 15 cl of extra virgin olive oil
- 1 sachet of baking powder
- A pinch of salt
Preparation of the recipe for shortbread with olive oil and honey
In a bowl, add the flour, sugar, baking powder, salt and mix everything together.
Grate the lemon peel and add it to the mixture with the olive oil, honey and eggs.
Knead with your fingertips so that the dough doesn’t stick to your hands.
Spread the dough between two sheets of baking paper (the thickness should be about 3 mm).
Put it in the refrigerator for about 30 minutes.
Then preheat your oven to 150°C.
Cut out the shortbread with a cookie cutter or a glass and place them on a baking sheet covered with baking paper.
Bake the shortbreads for about 15 minutes, keeping an eye on it. When your olive oil and honey shortbread is done, remove from the oven and let it cool for a few moments before eating!
