The traditional Provence olive oil pump or fougasse from Arles
The olive oil pump or fougasse d’Arles is a traditional Provencal dessert to enjoy in winter. This must-have of the 13 desserts in the Provencal Christmas will please young and old alike at breakfast and snack time!
Ingredients for 6 persons, cooking time 30 minutes :
- 700 g of flour
- ½ glass of extra virgin olive oil
- 1 organic orange
- 3 tablespoons of orange blossom
- 2 pinches of salt
- 200 g of sugar
- 25 g of baker’s yeast
Recipe for the olive oil pump:
To the flour add the salt, sugar and zest of the orange.
Dissolve the baker’s yeast in warm water and add to the flour.
Add the olive oil and orange blossom.
It’s time to knead the dough hard!
Form a ball and let it rise for 1 hour and 30 minutes.
Make a flat cake to be notched in various places.
Cook the pump in olive oil in a medium oven for 30 minutes.
A simple dessert to make! Ideal as an activity with children.
