Recipe for salmon tartar

Fresh salmon fillets, lemon, fresh herbs, diced avocado or tomato… the possibilities are endless when it comes to tartars. Don’t hesitate to try several variations that will delight you!
Ingredients for 4 people
- 2 large salmon fillets.
- 1 to 2 spring onions according to your taste
- 1 + 1/2 lemons
- 20 cL of extra virgin olive oil
- Fresh or frozen chives
- Balsamic vinegar cream
- Salt and pepper
Preparation of the recipe for salmon tartar
First, lay the salmon fillets flat on a board and insert the blade of a good knife between the flesh and the skin. Pull on the skin and slide the knife back and forth to remove all the skin from the fillets. Next, remove the fat from the fillets, cut them in half lengthwise to remove the flesh, then cut them into small cubes.
Wash the spring onions and chives if using fresh chives and chop them.
Squeeze the lemons to collect the juice.
In a bowl, add the diced salmon, spring onions, chives, lemon juice, olive oil, salt and pepper and mix well.
Finally, using a cookie cutter or a ramekin, arrange the salmon tartar on the plate. Add a few drops of balsamic vinegar cream and enjoy!
